MEET THE CHEF

Ms. Cubbon has lived in the Cayman Islands for over 20 years and is an active member of the local food and wine scene. She comes from a family of passionate cooks and started in the kitchen helping out at a very early age. Learning the basics from her Fijian mom - who she cites as the best cook she knows - her love for food blossomed. She has been involved in the food and beverage industry locally and in Canadas working with and being mentored by inspiring chefs and standout restaurants in Canada and Cayman. 

Ms. Cubbon is an award winning chef achieving first place in the Food & Wine Cayman Cookout Amateur Chef Competition in 2013 and was a finalist in 2012, cooking for the likes of Eric Ripert, Anthony Bourdain, Jose Andres and His Excellency the Governor Mr. Duncan Taylor. She was also the representing chef for the Cayman Islands at Caribbean Culinary Week in New York in June 2018.

 

She is the Culinary Director at Bestlife & Zest and is the Cayman Islands Ambassador for the Jamie Oliver Food Revolution global program. As a featured speaker at the TEDx Seven Mile Beach event in April 2014, Maureen is working on sparking a Cayman Style Food Revolution with the goal to empower people, especially children, to know where their food comes and hopefully inspire everyone to get into their kitchens and cook.

We love to inspire Budding Chefs  - join us for cooking classes at Bon Vivant Kitchen Studio, Cooking Club at school, Food Revolution Sessions, private parties, Seed2Plate Farm to Table school garden programs as part of Jamie Oliver's Global Food Revolution program.

Fresh Catch Duo: crudo & ceviche, breadfruit chips

 

Jerk wild shrimp or crispy coconut wild shrimp, mango sauce, tropical salsa 

 

Cayman style braised short ribs with cassava mash & roasted root veggies

Local lobster & wild shrimp cakes, scotch bonnet remoulade, local greens & champagne vinaigrette

Seafood Curry - local fish, lobster, wild shrimp in a homemade coconut milk based curry, garlic naan, home made local mango chutney

Seared cajun scallops with creamy scallion mash, pickled red cabbage garnish

Pan seared mahi with coconut rundown sauce, local pumpkin puree & garlicky local spinach

Jamaican mahi escovitch – lightly fried in organic avocado oil and served with pickled onions, carrots & scotch bonnet peppers, festival bread & farmers market slaw

Cayman style fresh catch simmered in a rich tomato sauce with capers, herbs, peppers & onions with callaloo rice & beans

Satay peanut chicken bowl over vermicelli noodles, braised local pak choi, pickled cabbage, spicy garlic chili sauce, coconut peanut sauce

Moroccan chicken with chickpeas, cous cous & currants, roasted eggplant

Creamy tomato pesto gnocchi with sweet Italian sausage, grilled garlic toasts, aged parmesan

Short rib ravioli: porcini mushroom stuffed ravioli, 5 spice short rib ragu, crispy shallots

Korean style short ribs, pickled chilis, toasted sesame seeds, mango papaya salad

*Accommodating for younger family members is no problem. We offer a variety of children's options including home made pizzas, organic free range chicken tenders, wild fish fingers, grass fed sliders and more!
